1 cup cooked brown rice
1 small broccoli (cut into 3cm chunks)
A handful of green beans (top, tailed and cut in half)
1 large avocado cut into chunks
Big croutons (made from sourdough bread fried in olive oil)
2 heads of cos lettuce (torn)
90g Meredith goat’s feta (crumbled into pieces)
⅓ cup roughly chopped dill (can add any soft herbs here)
¼ cup pepitas
⅛ cup sesame seeds
⅓ cup roasted almonds
Juice of 2 lemons
¼ cup olive oil
Salt and pepp
As with all good salads, let’s keep this simple. Blanch then ice your broccoli and green beans and drain. Toss everything together with conviction in a large salad bowl and ask yourself, is this really even classified as a salad with all these incredible ingredients? The answer is yes.
