Green Beans with Lemon & Almonds

The main ingredient: Green beans
Zing: Lemon juice and rind
Crunch: Toasted almonds
Extras: Smoked olive oil, salt and pepper

How to: blanch the beans in boiling water for a couple of mins then toss them in a bowl of ice water to stop them cooking. Drain and place them on a serving plate, grate over lemon rind, squeeze over juice, drizzle with olive oil and season with salt and pepper. Top with the toasted almonds.
